Caprese Stacks

  • pint of Campari Tomatoes, small round heirloom tomatoes or cherry tomatoes
  • container of small fresh mozzarella balls
  • Tasty Olive Company Basil olive oil
  • kosher salt and pepper to taste
  • fresh basil
  • toothpicks

With a serrated knife, carefully cut each tomato into 4 slices from the stem to the bottom.  Slice the fresh mozzarella into slices about 1/4 to 1/2 inch thick.

Assemble the stacks starting with the bottom slice of the tomato, cheese, tomato, cheese, tomato, cheese and then finish with the top piece of tomato that has the stem.  Lightly salt and pepper each layer along the way.  Once assembled, take a piece of basil and poke the toothpick through it and then run the toothpick through the tomato and cheese stack to secure. The basil should be at the top to look like part of the stem.  Place finished stacks on a serving platter and drizzle with Tasty Olive Company’s Basil Olive Oil.
