 Made with White Trebbiano Grape Must, our White Peach Balsamic does undergoes the cooking and barrel aging process of Balsamic Vinegar of Modena but is not caramelized therefore it retains its white color. The result is a crisp vinegar with a touch of sweetness reminiscent of handcrafted vinegars from northern Italy. Extremely adaptable, it can be paired with any of our Extra Virgin Olive Oils, as well as our flavored oils to make a light, tart vinaigrette.

 Honey and Ginger plays well together and brings a gentle, spicy heat which balances perfectly with the moderate, natural acidity of our white balsamic vinegar. This condiment is superlative when paired with our Persian Lime Extra Virgin Olive Oil and positively shines with our Japanese Toasted Sesame Oil! Mix and amazing marinade with the vinegar, toasted sesame oil, our Garlic Virgin Olive Oil and soy sauce.

 Aged Pure Maple Balsamic

We have searched high and low, and it appears that we have created the first of it’s kind, an Aged Pure Maple Balsamic, using real 100% pure maple produced at a small family farm in Vermont. This balsamic is OUTRAGEOUSLY good. Think pancakes, waffles, glazing bacon, pork chops, ice cream, dressings, marinades, chocolate cake, fruit, and on and on. It pairs insanely well with our Organic Butter Extra Virgin Olive Oil, California toasted.

This aged Balsamic Vinegar is amazingly complex, with layers of authentic espresso and dark roasted coffee. It makes a fantastic glaze or bar-b-que base for pork. beef or chick. Add a shot to an “affogatto float,” which calls for a tall mig of vanilla gelato scoops covered with coffee.
